Ghost Pepper Pickles

This is a perfect snack for spicy food lovers! Make your own ghost pepper pickles at home with this easy recipe.

Ingredients:

 7 Kirby Cucumbers (sliced how you like)
• 2 qt filtered or distilled water
• 4 oz salt
• 1 qt Apple Cider Vinegar
• ½ oz dill seed
• ¼ oz bay leaves
• ¼ oz black peppercorns (whole)
• ¼ oz coriander Seeds (whole)
• 5-10 cloves of garlic
• 2 oz fresh dill
• 3-4 ghost peppers
• ¼ oz crushed red pepper

 

Instructions:

  • Combine water, salt, and vinegar in saucepan and bring to a boil to create brine.
  • Once the brine is boiling and the salt is dissolved add ½ spices and immediately pour over cut cucumbers.
  • Scatter remaining spices over the surface of the brine.  Add dill & ghost peppers and push down to mix throughout the brine.
  • Cover partially and let cool at room temp for about an hour.
  • Refrigerate with a tightly sealed lid and store for up to 3 months.
            • CAUTION: USE GLOVES WHILE HANDLING GHOST PEPPERS TO AVOID CONTACT WITH SKIN.
