Ghost Pepper Jelly

Ghost Pepper jelly?  What else can you do with pepper jelly?  There are many different ways you can use it alone or in other recipes. Below are a few ideas:

 

  1. Use as a glaze over meat while grilling.
  2. Sandwiches – use pepper jelly in the place of mustard.
  3. Cocktail Meatballs – many people use grape jelly to make these with a crock pot.  Replace it with 1 jar of Pepper Jelly!  Place frozen meatballs on low in a crockpot and mix with a jar of Pepper Jelly.
  4. Use in Pulled Pork – Together in a crockpot, add Pork Roast Butt (roast type cut) (3 lbs) and with a mixture of water, 1 cup of Pepper Jelly, 1/4 cup of vinegar (white or cider), 1/2 cup of brown surger and 1 to 2 TBL of Worcestershire Sauce. Cook on high 4 hours – pull apart meat in the crockpot and continue cooking for 1 to 2 hours.
  5. Serve over ice cream.
  6. Toast or Bagel, cream cheese and pepper jelly.
  7. A sauce for hot wings.
  8. A glaze on baked ham.
  9. As an appetizier – make Jalapeno Poppers.

 

A simple, easy-to-make recipe for jalapeno jelly with sugar, pectin, and fresh jalapeno peppers. Perfect for morning toast but also as a starter glaze or sauce.

 

INGREDIENTS:

              • 1 – 2 FRESH GHOST PEPPERS finely chopped
              • 2 red bell peppers finely chopped
              • 1 1/2 cups white vinegar
              • 5 cups granulated sugar
              • (1) 6 oz liquid pectin

 

INSTRUCTIONS:

              • Sterilize 4 half pint jars and lids by boiling for 10 minutes or running through the “sterilize” setting on your dishwasher. Set warm sterilized jars on clean kitchen towel while preparing the jelly.
              • Put on gloves! Ghost peppers are hot! Stem, seed and roughly chop all the peppers. In a food processor or blender, puree the peppers with 1 cup of the vinegar.
              • Combine the puree with remaining vinegar and the sugar in a saucepan. Bring the mixture to a boil (be careful not to breath in the steam or get it in your eyes!!!). Boil for 15 minutes, careful it can boil over. Remove from the heat, blend in the pectin, and stir for 2 minutes.
              • Ladle the jelly into the sterilized jars, leave 1/4″ head space. Wipe the rims of the jars with a clean, moist paper towel. Place 2 piece lids on the jars (don’t over tighten the screw top). Process in hot water bath for 10 minutes.  When removing from the hot water bath, do not place directly on a countertop.  Sealing of the jars can take up to 24 hours. Avoid moving the jars as much as possible to allow the seals to cool and set.
